PEELED AND THINLY SLICED

WHITE WINE VINEGAR

TEASPOONS WATER
1 TEASPOON
BROWN SUGAR (sugar twin works best)
1 TEASPOON
PEELED, GRATED GINGERROOT
1/8 TEASPOON
CRUSHED RED PEPPER
2 TABLESPOON
LEMON JUICE
1/4 TEASPOON
CURRY POWDER
1/8 TEASPOON
SALT
3 (8oz)
GROUPER FILLETS, HALVED
VEGETABLE
COOKING SPRAY
Combine
first 10 ingredients; cover and chill at least 2 hours.
Combine
lemon juice, curry powder, and salt. Place fillets on rack
of a broiler pan coated with cooking spray; brush with lemon
juice mixture. Broil 5 1/2 inches from heat 8 minutes or until
fish flakes easily when tested with a fork. Transfer fillets
to a serving platter; top evenly with pineapple mixture.
