MAHIMAHI FILLETS
1/4 CUP
LIME JUICE
1 CLOVE
GARLIC, MINCED
1 (1/8-INCE
THICK) SLICE PEELED GINGERROOT
Cut each
fillet into 3 equal pieces. Place fish in a shallow baking
dish. Combine lime juice and next 2 ingredients in a small
bowl, stirring well; pour over fish. Cover and marinate in
refrigerator 1 hour.
remove
fish from marinade. Remove and discard gingerroot. Coat grill
rack with veggie spray, place on grill over medium-hot coals.
Place fish on rack and cook for 8 minutes on each side (vary
time if your fillets are a little thinner). To test doneness,
make sure fish is flaky. Baste frequently with marinade.
