SCALLOPS
WITH SPINACH
1 pound large scallops
olive oil
1 tablespoon dijon mustard
fresh spinach
curry powder
6 tablespoons heavy cream
Heat olive oil in pan, add scallops, cooking for 2 minutes
each side.
Remove from pan, add as much fresh spinach as you'd like and
saute for 1
minute. Add cream, mustard and curry powder and heat through.
Add
scallops back into pan and cook for an additional 2 minutes.
